(Aus.) a boiled meat pudding, usu. cooked in the bush or at a sheep station.

Emigrant’s Guide to Aus. [unpub. ms.] 111–2: Take the [...] flour and work it into a paste; then put the beef into it, boil it, and you will have a very nice pudding, known in the bush as ‘Station-jack’ [Morris].
